  • ~Pasta Pistachio e Speck~ 

Happy Tuesday 🙃 so many of you were asking what I was making for lunch yesterday and of course I had to do a Reel! 

A few weeks ago I was having dinner with one of my closest friends from Italy and was telling her how hard it is to get decent Speck in the UK. When she next came over she brought me the biggest chunk of Speck which means I could make one of my favourite pasta dishes - a dish I first had in Sicily many moons ago. 

It’s super simple and my version doesn’t require cream, you just need blitzed pistachios, cubed speck and lots of Parmesan. Cook your pasta (I used Mafalde this time) and then use the pasta water to create a creamy sauce with the Parmesan. 

Delicious, comforting and… delicious 👩🏻‍🍳

  • ~ Fresh Paccheri with Zesty Zucchine & Ricotta~

🙋🏻‍♀️Oh hey there! Remember me?! It’s been a while since I’ve had any time to create and share something delicious with you all! However, I was fortunate enough to be sent some of @latuapasta new short fresh pasta shapes to try! 😍

I usually associate Paccheri with a rich wild boar ragu but with how the weather was at the start of this week (remember the heatwave?!) I opted for something more fresh! ☀️

So, off to our allotment I went and grabbed some of our wonderful zucchine and an onion, combine it with some ricotta & lemon and ta da! 👩🏻‍🍳❤️

Serves 3
300g La Tua Pasta Fresh Paccheri
1 Large Zucchina, grated
3 Small Zucchine, sliced
1/2 Onion, diced
1 Lemon, zest + juice 
250g Fresh Ricotta
Salt
Pepper
Olive oil & Extra virgin Olive oil

To serve: Parmesan 

Method:
1. Add a pinch of salt to your grated zucchina and set aside - this removes some of the liquid. Fry sliced zucchine in olive oil & set aside also.
2. In the same pan, add EVOO then the diced onion and sauté on medium-low heat. Once translucent, squeeze out the liquid from the grated zucchine and add to the onions. Season with salt & pepper and sauté for 5 minutes.
3. Add lemon zest, a little squeeze of lemon juice and the ricotta, reducing the heat to low.
4. Cook your Paccheri in salted water for 3-4 minutes. 
5. Add some pasta water to the ricotta sauce to lengthen before adding the pasta to the sauce. Toss to combine and add more water if needed until you get a silky sauce.
6. Serve with the fried zucchine slices and Parmesan.

This time last year, @rosiecebbs and I were preparing our Dutch themed buffet discussing “What If Italy won Eurovision..” we would have to really rein in our menu… fast forward to Måneskin winning Eurovision and then to yesterday and well… we didn’t rein in our menu 😂😂

2 full days of cooking, lots of washing up and plenty of coffee.. we put on a full Italian FEAST! Pasta al forno, arancini al ragù, salumi, pizzette, bruschette, caprese salad and some INCREDIBLE wings (recipe coming soon)! It was so great being back in the kitchen, doing what I love and I can’t wait to get back into doing this more and more - the mojo is slowly returning and I couldn’t have done it without my sous chef 💜Head to my story and highlights for more!

  • Two months have passed since we said goodbye to my Queen, Nonna Lucia. It’s been tough, and whilst I’m still trying to find my Mojo back in the kitchen, I have felt ready to put write a post dedicated to my Nonna and her life. If you would like to read it, then click the link in bio ❤️

  • Yesterday our Queen fell asleep for the final time and went on to a better place 🕊 

Over the past couple years, she has become a frequent and important part of this food blog, gracing us with her skills, recipes and just pure presence in my stories and posts. I’m forever grateful for the time we got to spend together both in Italy in 2019 and also during lockdown here in London. It gave me the opportunity to create memories that never would have happened otherwise and I learnt so much from this incredible Queen. 

Once the pain and sadness has settled, I look forward to recreating all of her special recipes that she passed on although I know they will never be as delicious as when she made them but at least a part of her will continue to live on through these dishes.

  • I know we are venturing out of pumpkin and into Christmas season but I really fancied making some pumpkin spiced snickerdoodle cookies over the weekend! And so I did! I then found some adorable munchkin pumpkins 🎃 in @sainsburys and knew I had to play around and photograph these delicious treats! Top it all off with a beautiful bunch of autumnal flowers🍁💐 my Mama sent me to congratulate my new upcoming job I’m so so pleased with how this shoot turned out! It also meant I got to play around with my new lenses - I have invested in a new 50mm and 100mm lens and just wants to take them for a spin! I believe this one was taken with my 50mm! Yesterday our Queen fell asleep for the final time and went on to a better place 🕊 

Over the past couple years, she has become a frequent and important part of this food blog, gracing us with her skills, recipes and just pure presence in my stories and posts. I’m forever grateful for the time we got to spend together both in Italy in 2019 and also during lockdown here in London. Yesterday our Queen fell asleep for the final time and went on to a better place 🕊 

Over the past couple years, she has become a frequent and important part of this food blog, gracing us with her skills, recipes and just pure presence in my stories and posts. I’m forever grateful for the time we got to spend together both in Italy in 2019 and also during lockdown here in London. It gave me the opportunity to create memories that never would have happened otherwise and I learnt so much from this incredible Queen.

I know we are venturing out of pumpkin and into Christmas season but I really fancied making some pumpkin spiced snickerdoodle cookies over the weekend! And so I did! I then found some adorable munchkin pumpkins 🎃 in @sainsburys and knew I had to play around and photograph these delicious treats! Top it all off with a beautiful bunch of autumnal flowers🍁💐 my Mama sent me to congratulate my new upcoming job I’m so so pleased with how this shoot turned out! It also meant I got to play around with my new lenses - I have invested in a new 50mm and 100mm lens and just wants to take them for a spin! I believe this one was taken with my 50mm!
